The Million-dollar question. Why doesn’t it taste the same as when you cooked it? I often have people asking me for my recipes. Which I am totally honored with. You couldn’t give me a bigger compliment then asking for one of my recipes. I am all about good food and I love to cook. So what about that question, “Why doesn’t it taste the same as when I cooked it or prepared it? Well 9 out of 10 times I can guess that you didn’t follow my recipe. Now in my world I think a recipe is just a draft. You have to make it your own, UNLESS you like it exactly how you had it the first time. If you did then follow the recipe. Now what that means is if the recipe calls for extra virgin olive oil or fresh lemons, then use them. Go out and get these ingredients. Don’t say to yourself well I’ll use vegetable oil or bottled lemon juice. Don’t say that unless you are also saying “it won’t taste the same but it maybe similar” The same goes for if the recipe calls for an ingredient that you normally don’t enjoy but you enjoyed the taste of the dish. Then use that ingredient. So what am I getting at? If you liked it so much the first time, then follow that recipe. Now I am going to pass on a recipe that I have given out so many times I have lost count and I have had so many people come back and say it didn’t taste the same. Now this recipe took me 2 years to perfect. It is Carolin’s Caesar Salad. This is a year round salad. You can have it in the summer months with grilled chicken or shrimp on top or in the winter with a robust pasta and the ingredients are available year round.

Carolin’s Caesar Salad

5 Tbsp Extra Virgin Olive Oil
2 Tbsp Balsamic Vinegar
1 tsp Worcestershire Sauce
1 Egg Yolk
2 Garlic Cloves crushed
1 Lemon (Juiced)
2 Anchovy fillets
½ Cup Fresh Parmesan Cheese divided in half

1Head Romaine Lettuce
Croutons

Using a blender or hand blender add the oil, vinegar, Worcestershire sauce, egg yolk, crushed garlic, lemon juice, anchovies and 1/4c of the parmesan cheese. Blend til smooth.

Clean lettuce, tear up and place in salad bowl. Sprinkle the other 1/4c of Parmesan cheese and croutons on top. Pour dressing over and toss.

Voila the best Caesar salad you have ever tasted.

COOKING TIP OF THE DAY

When using a cutting board place a towel under the board to prevent the board from sliding around.
