Yes it is football season, whether you like it or not. I am Canadian so our season is getting close to an end, but the U.S. season has just begun. I have to admit I do like American football. Now I am not sure if it is because on Sundays I can sit down and my husband will have whatever game is on and I get drool over Howie Long and enjoy Terry Bradshaw’s humor. Or if it is the game itself. Because I don’t get to really watch much of the game, being a mother of 2 active boys. Anyways back to football season. Is it not all about food? Really if you think about it, besides the players and some of the fans. We are all sitting at home consuming a lot of snack type foods and some beverages (I hate pop or soda so I am forced to have a nice Pale Ale).

Now one of the favorite foods to eat during a football game and that pairs up perfectly with that Pale Ale of mine is Hot Wings. I love Hot wings. I love hot food. Really hot food. But I have to say there is something soooooo good about a hot wing. Now I am going to tell you something else, I have yet to find a frozen hot wing I like. They always taste a bit different to me, or they are never hot enough. Or they aren’t the right texture, I could go on and on. You probably get the hint by now that I like the home made ones. But the home made ones can get messy and tedious. With deep-frying and you can only do so many at a time. Well guess what I have found the solution. Great tasting wings that is easy and not very messy. I bake and broil mine. The best part they taste great and that is what we are trying to achieve here. They are the closes I have found to the deep-fried ones at the pubs and bars. Plus there is a benefit here that they aren’t deep fried so they are a bit healthier. So here we go, I am going to give you my recipe and technique. Please Please make it your own. If you think there is too much hot sauce use less and the same goes if you want more use it. Remember a recipe is just a draft. Make it your own, and enjoy that game.

GAME DAY HOT WINGS

2 ½ lbs chicken wings (split and tips removed)

Marinade
5Tbsp Hot sauce
3Tbsp oil(I use olive oil)
2Tbsp Vinegar(any vinegar will do)

Sauce
Hot Sauce
1Tbsp butter
1tsp lemon juice or vinegar(again any vinegar will do)

For Warm use 5Tbsp Hot Sauce
For Hot use 7Tbsp Hot Sauce
For Killer you be the judge

I Use about 9Tbsp myself

Whisk marinade ingredients together. Place wings in a zip lock bag, pour in marinade. Let marinade at least 45 min. I do it over night if possible.

Preheat oven to 400 degrees

Spray a cooking sheet with a non-stick spray or olive oil. Spread wings out onto the cooking sheet. Bake for about 40 min. Then turn broiler on and broil each side to crisp up a bit.

While wings are cooking mix sauce ingredients together and cook in a saucepan over medium heat for about 10 minutes.

When wings are done put on a plate and pour over sauce.

You can serve them with blue cheese or ranch dip. I am a purest so I like them just a they are with extra sauce.

Tip Of The Day
Thoroughly wash everything including your hands with an antiseptic soap after handling chicken.
I can’t say this enough, because I still see people not washing their hands properly after handling chicken.
