I Love Lemons

Sour yes but oh so delicious. Lemons are they not just the best. Lemons to me mean flavor, flavor, and flavor. If something doesn’t taste up to par, a lot of the time you can add some freshly squeezed lemon juice and Wow what a difference. They can go into anything. They can add a little zing to a drink, a beer, and a cup of tea. They can add that extra flavor to a soup or a salad dressing. You can squeeze it over your fish dishes. The list goes on. I just don’t think people use it enough. If you came to my house right now in my fridge you would find a bag a lemons. I bet you I use lemons at least 5 days out of the week. Yesterday I made a simple tomato salad and I used some grated lemon rind and the juice in the salad, it made those tomatoes taste that much better.
Now I have to say, that when you are looking in my fridge for my lemons. The one thing you won’t find is bottled lemon juice. Why, because for the most part I don’t like it. I figure lemons are so readily available, why not buy fresh. Honestly if you tasted the fresh lemon juice and then the bottled stuff, I think you would agree with me.
Now it isn’t just the juice from the lemon that is so good. The rind is just as tasty, actually more so than the juice. So for that extra bunch just grate some of the rind into your dish. By grating the rind you are releasing the essential oils and that is where the flavor is. Make sure not to go into the white part. It is bitter.
I have talked about how lemons are so good in different foods, but I did not mention desserts. I don’t think I have ever past up on a dessert that had lemon in it. A dessert with lemon in it and a nice strong cup of coffee and I am in heaven. So that is why I thought today I would pass on a ridiculously easy loaf cake to you. Now I know I said I only like fresh lemon juice, which I do use in this recipe. But the cake mix and pudding I do buy. I told you it was easy.
Easy Easy Lemon Loaf
1 Lemon cake mix
1 Lemon instant pudding mix
4 eggs
¾ cup of water
¼ cup fresh lemon juice
½ cup of oil
The rind of one lemon grated
Preheat oven to 350° F
Mix all ingredients together. Pour into large loaf pan. Bake for about 45-50 minutes. Or until the center is done.
You can glaze with icing sugar and lemon juice. I don’t. Instead I slice it and serve it with butter. I love butter on my lemon loaf.
TIP OF THE DAY
For grating lemon rind so it is very fine use a tool called a rasp. You can find them in the kitchen shops, but I found the best ones are sold at the hardware stores and they are usually less expensive.
