Perfect Pizza

Pizza, how perfect is this dish. You can have it for an appetizer, a meal, or a snack. You can eat it with your hands. You can totally personalize it just for you. How perfect is that. I personally think any food that you can eat with your hands is a wonderful food. Yes I am a kid at heart.

The pizza you get in North America is usually quite heavy on most ingredients. Sure you can have thin crust or thick crust. But for the most part it has a lot of cheese a lot of meat and other toppings. There is nothing wrong with that. I have eaten a lot of pizza in my life, and since I live in Canada I have usually had this type of pizza. But it doesn’t have to be that way.

Apparently if you go to Italy their pizza is anything but like the type we are used to. It is actually quite light on the toppings. Very simple. Packed with flavor, but not packed with toppings. They aren’t all about lots of sauce and cheese. They don’t necessarily always use tomato sauce. Sometimes they use Olive oil.

Now I have never been to Italy (Yet). But I have been fortunate enough to have different styles of pizza. I have to say that I am a person who prefers fewer toppings. But still lots of flavor. I also am all about thinking out of the box for flavor or toppings.

Now I am also a person that believes that you should try different foods. Even if you are not sure, try it then you will know for sure whether you like it or not.

I am going to share a recipe with you that I absolutely love. The first time I ever tried this pizza was in Kona, Hawaii. My taste buds were very happy. I had to not only take in the entire flavor but I had to try to remember all the ingredients that were on the pizza. I can’t even tell you what it was called. But I can tell you I came home and did my best version of it and my husband loved it. So I have decided to call it My Favorite Pizza. One thing you must know most of the measurements in this recipe are approximate, except for the pizza shell.

MY FAVORITE PIZZA

1 Pizza shell (store bought or home made)
Extra Virgin Olive oil
1 Large Onion (Use a red or sweet white onion) sautéed
1 head of garlic roasted
A couple of sprigs of fresh rosemary roughly cut
½ - ¾ cup Blue cheese.
Kosher Salt

First to roast garlic preheat your oven to 325°F. Take the whole head of garlic a slice off the very top. Just a bit. Then place on a piece of foil and drizzle extra virgin olive oil over the top. Wrap the garlic up in the foil and bake for about an hour. When you bring it out of the oven it should be golden and soft. You should be able to squeeze the garlic right out of the skin.

While the garlic is roasting, thinly slice the onion and sauté in a pan with olive oil. Do this on a lower heat. You have the time while the garlic is in the oven. The longer you cook the onions the sweeter they become.

For pizza, preheat oven to 425°F. Drizzle the shell with extra virgin olive oil, spread around. Then spread on the roasted garlic and onions. Sprinkle with the rosemary, then the blue cheese. I like to sprinkle a little kosher salt on top. It just seems to bring out the best of all the flavors. Bake for about 20 -25 minutes. The cheese should be melted.
Remove from oven, then let sit for 5 minutes, pour yourself a glass of wine. Slice the pizza and enjoy.

TIP OF THE DAY
Instead of using wooden or stainless steel skewers for kabobs use rosemary sprigs. Remove the herb and use the actual sprig as the skewers. It just one extra flavor added to your food.
