Mexican Cooking For The Whole Family

Cooking Mexican or should I say cooking Mexican North American style. There is a vast difference. Now I live in Canada and yes we do have some very authentic Mexican restaurants and then there is the fast food ones where it is the type of Mexican cooking that we do at home for our kids. Which is fine, but the one we are doing for our kids is a lot healthier than the fast food one. What I like about cooking Mexican is that they have a lot of layers in their foods. Now what layering food does is it gives you a whole lot of flavor in one bite. It is rare that if you have Mexican food that you would be served a piece of chicken without any type of sauce on top. Or without the piece of chicken being on top of something. I think this is a brilliant way to cook. Not only is it for the most part appealing to the eye, like I said before it is appealing to the taste buds. It is also a great way to get your kids mouth used to more than one flavor at a time. All you parents know what I am saying here. You know how your child has to eat everything separate. Then they start to expand by dipping into ketchup or if they are like my boys they dip into mustard. But that’s how kids are, partially because they have way more taste buds than we do. So it is a party in their mouths compared to ours.

Well today I am going to stay with the layer affect of cooking Mexican. This recipe is great for kids. It has everything they like in Mexican cooking. It has the ground beef or chicken, cheese, tortillas and beans. Now the beans may not be top on their list. I’ll give you a tip in my tip of the day to get those beans in. Now this recipe is so simple, so get your kids helping you on this one.

Layered Burrito Pie

1 1/2lbs lean ground beef or chicken
1 pkg taco seasoning
3/4-cup water
4-10inch tortillas
1 can (14oz) refried beans (I use lowfat)
1 1/2 cups shredded cheese (I use the one already shredded)

Preheat oven to 350°

On stovetop brown ground beef or chicken in a large skillet over medium high heat. Drain if necessary. Add taco seasoning and water. Once it comes to a boil lower heat to med low and reduces for about 10 minutes.

In a 9 inch lightly greased pie plate, place 2 tortillas they will over lap. Cover with half the refried beans, ½ the meat and half the cheese. Then add another tortilla and do the same. Top with the last tortilla.

Bake for 30 minutes.

Top with the usual toppings, salsa, sour cream and if you are lucky some guacamole.

TIP OF THE DAY
If you have to sneak the beans in mix them in with the ground beef or chicken. I do this anyways if I am using chicken because of it having less fat it can be drier so the beans moisten it up. The kids never know.
