Today I am going to stick with the theme of holiday cooking which to me really means home cooking. Because for most of us we do spend the holidays at home or at someone else’s home. Home cooking for the holidays is a great time to share some stories and laughs. We do a lot of home cooking during the holidays because I think it gives us comfort. We don’t really have to rush like we do most of the year. So we have the comfort of home cooking our comfort food.
Now some foods or recipes we do year after year. Like my stuffing. I do not think I have really varied on that for at least 20 years. There are something’s that you just don’t change. Then there are others that you do change. Now ever since I can remember there was yams or sweet potatoes at holiday dinners. When I was a little girl there was no way that I was ever going to eat them. Then I grew up and up. It wasn’t until I was in my late 20’s that I started to eat sweet potatoes or yams. Now before I go on any further. I know there is a difference between the two but I interchange them all the time. There seems to be a common theme with sweet potatoes or yams, most people like to cook them to be even sweeter. Now I am not against this. I do like it to a certain degree. But I have to say I prefer them to be more on the savory side.
Remember when I said some recipes you never change and others you do. Well this is one of them for me. Today I am going to share a recipe that is not only so easy but it will knock you socks off. Try it over the season. Surprise your guest with this one. If you are into vegetarian cooking you are really going to be happy with this recipe.
Blue Cheese Sweet Potatoes
4 medium sweet potatoes
½ cup Gorgonzola Cheese( you can use other blue cheese, gorgonzola is creamier)
1 ½ Tbsp Butter
1 tsp chopped green onions (green part only) or use chives
salt and Pepper
Preheat Oven to 375°
Bake sweet potatoes or yams until they are fork tender, about 45 minutes to an hour) You can also microwave them if you are in a hurry. I try to do them in the oven for the extra roasted flavor.
Once potatoes are done and cooled down enough to handle, remove all the flesh and discard the skin. Add the rest of the ingredients and mash together. You don’t want it to be smooth. This is rustic. Place in casserole dish.

TIP OF THE DAY
If you want to make this a couple of days ahead of time. Just let potatoes cool right down then add the rest of the ingredients. Place in the fridge until ready to use. Re-heat for about 25-30 minutes at 375°.
