Salad and Blue Cheese What Could Be Better

Today I have a huge craving for salad. More specifically salad with Blue Cheese dressing. I love Blue Cheese. You either love it or you hate it. Well if you love it, today is your lucky day. Now I also love salad. I love salad that has cold fresh greens or just some real cold crisp lettuce. Add some cold crispy vegetables and I am happy. I find that with salad we are always trying to find different ways to prepare salads. Like pasta salads, rice salads and so on. Which are all great but sometimes it is just nice to have a crisp green and vegetable salad.

Now with me saying that the recipe that I am going to share with you today is actually very versatile. I love it of course on a green salad, but it can easily be used in a pasta salad or even a potato salad. I also just use it as a dip for vegetables. It is easy and you’ll probably have most of the ingredients on hand.

Homemade Blue Cheese Salad Dressing

2Tbsp mayonnaise
1/4 c milk with 1Tbsp vinegar mixed in let sit for a minute
1/4 c sour cream
1/2tsp sugar
1/3 c blue cheese crumbled
Salt and pepper to taste

Whisk together everything except blue cheese. Then stir in crumble Blue cheese.

Note: I actually use white balsamic vinegar, but plain white vinegar is fine.

COOKING TIP OF THE DAY

If you are worried about the fat content, use low fat milk, mayonnaise and sour cream.
