Cooking Pasta For Thanksgiving

Thanksgiving for the U.S. is on Thursday and I have seen all over the Internet people wanting recipes for thanksgiving dinner. There are a lot of request for vegetarian recipes for Thanksgiving dinner. I find so many people start to panic if they are having a vegetarian over for a holiday dinner like Thanksgiving or Christmas. There is no need to worry. Yes you may want to add a dish or two to cater to them, but it doesn’t have to be anything complex. The one dish that came to mind when I was reading all the request on the net was pasta salad. This is an ideal dish to add to your holiday table. It can be very easy but very tasteful at the same time. Plus it will please all people not just the vegetarian. It is also filling so there is no need to worry about your vegetarian guest going hungry.
I have an ideal past salad recipe for the holidays. Not only does it taste great but also it can be very festive looking. You can make it the day before so there is no last minute rush. Vegetarian cooking can be so easy if you want it to be and it doesn’t have to be just about vegetables and tofu.
Festive Pasta Salad
1-cup mayonnaise
¼ cup chopped parsley
1 tsp dried basil
1 garlic clove minced
8 oz cheese cubed (I use aged cheddar or swiss)
2 cups cooked broccoli flowerets
1-cup tricolor corkscrew noodles
2 medium tomatoes cut into thin wedges
½ cup chopped almonds (optional)
Cook noodles according to package. Drain and put into a bowl full of ice water to stop cooking.
Cook broccoli in salted water. Be sure to use a good portion of salt. This way your broccoli will stay bright green. Cook just until fork tender. Drain and again place in a bowl of ice water to stop cooking and maintain brightness.
Add noodles, broccoli and all other ingredients except tomatoes to a bowl. Mix well and then top with tomatoes. Let sit for a couple of hours or more in the fridge.

TIP OF THE DAY
To maintain the bright green color when cooking green vegetables always salt your boiling water and don’t be shy on the salt. Most of it will be drained out when you drain your vegetables. Otherwise your green vegetables will go towards the brown color.
