Have you ever had a dish that you know that everyone would love? Then you think oh this would be great for my family or even a bunch of people. Then you think about it even more and you decide that it would probably be too difficult to do. Well what would happen if it were that delicious but at the same time so darn easy. You know it is that time of year that we seem to be going to a lot of parties or having a lot of parties. I find that more and more these days, people tend to have gatherings and everyone brings a dish.

Well today I have a recipe that you can cook up in no time at all. You can just have it for your own family dinner or if you are going out over the holidays and want to bring something that will impress everyone. This is the dish for you. This recipe is somewhat Mexican cooking, but I rather call it easy cooking and if you want cooking for parties.

This recipe won’t just impress the adults it will impress the kids to. You can definitely get your kids cooking on this one.

Try this one especially if you want a bit of change from turkey or ham during the holidays. Hey no one said holiday cooking had to be traditional.

Creamy Cheesy Chicken Tortillas

½ c mayonnaise
½ c flour
3 cups milk (any milk whole or even 1%)
12 oz shredded cheese (I use the already shredded Mexican style one)
1-½ lbs cooked chicken cubed
¾ c salsa
½ c chopped parsley
Flour tortillas (I use the large ones for family and the 6” ones if I am taking this dish to a party)

Preheat oven to 375°F

In a medium saucepan whisk together mayo and flour cook over medium heat for a minute. Gradually add milk whisking until smooth. Cook until it begins to thicken and comes up to a boil. Stir in half the cheese and ½ c of the salsa. Put 1 cup of the sauce to the side.

Add the chicken and parsley to the remaining sauce. Stir and blend. Spoon out mixture on to each tortilla. If you are using the 10” tortillas it will be about 1/3 of cup for the smaller tortillas about ¼ of a cup. Roll up and lay in a baking dish seam side down. Top with remaining sauce, salsa and then cheese. Bake for 25 minutes.

TIP OF THE DAY

If you need chicken for a dish like above but forgot to take it out of the freezer. Just cook it from the frozen state in simmering chicken stock. It is fine cooked like this for soups and saucy dishes.
