Well first of all let me send a big Happy Thanksgiving to all the people in the U.S. I know it is one of the biggest if not the biggest holiday for you guys. I hope that all of you have a wonderful day with your family and friends.
Now on that note, you probably have noticed lately I have been writing a lot about holiday cooking. You would not believe how many people ask me what kind of cooking they should do around the holiday season. They always think they need to go big and elaborate. Well I am going to let you in on a little secret. People are not looking for that. If people are coming over to your house, they don’t expect some elaborate feast. They want to be cozy and comfortable. So lets make them comfort food.
I have a recipe I want to share with you. I love this recipe all year, but it works especially well around the holidays. It is a curry vegetable side dish. Now it is a yellow curry but not necessarily an Indian curry recipe. Mind you if want to say it is Indian cooking I don’t think anyone would be insulted. This recipe defies all traditional holiday cooking. Most of us seem to stay with what is familiar like steamed vegetables. Well I am here to rock that boat a bit today. Now I have said it is a curry base but again for all you curry haters I may be able to sway you over to the other side on this one. I had one friend say he didn’t even know it was curry base.
So here you go, something new for holiday cooking. But still home cooking.
Curry Cauliflower
1 Large head of cauliflower cut into bite size pieces
1 can Cream of Chicken Soup
½ c mayonnaise
¼ c sour cream
Curry to taste (I use curry paste about 1 ½ Tbsp) add it slowly and taste until it taste like you want it.
Preheat oven to 350°F
Mix the soup, mayonnaise, sour cream and curry in a casserole dish. Blend until smooth. Add cauliflower. Stir until well coated.
Bake covered for 45 minutes.
Oh did I mention how easy it was to prepare.
COOKING TIP OF THE DAY
You can substitute fresh green beans for the cauliflower.
