Christmas Cheese Ball and Wine

I am still on the Christmas theme. I said before I love Christmas. Today is a going to be a good day for me, because I am going to go out and shop for wine for Christmas. This is another passion of mine. I love to wine shop and try some new wines. Some wines as soon as you taste them you know what foods you want to pair it with. Well today I will try some wines but I know I will be buying for sure some Zinfandel. I love red and white Zinfandels. I will let you in on a little secret I learned. Zinfandel is referred to as the golden retriever of wines. Meaning everyone likes them and they like all foods. So if you are not sure what wines to serve go with a Zinfandel you really can’t loose.
So I started thinking what a nice glass of Zinfandel would be good with and I remember a recipe I had for a cheese ball. Not your regular savory cheese ball. This one has the savory and the sweet. It has just a few ingredients but is so good and if you need to take something to someone’s house over the Christmas holidays this is a good one. Of course it is festive looking as well.
Pineapple Cheese Ball
8 oz cream cheese room temp
½ cup crushed pineapple toughly rained
2 tbsp green onion minced
¼ large red pepper minced
Salt if needed
Finely chopped pecans and parsley
Mix together cream cheese, pineapple, green onion, and red pepper. Taste and decide if you need salt. Place on a piece of plastic wrap. Bring plastic wrap around cheese mixture to form a ball. Place in the fridge for an hour or so to stiffen up. Then bring out and roll in pecans and parsley.
COOKING TIP OF THE DAY
Instead of shaping into a ball. Shape into a log. Then do as above and stiffen and then roll in parsley and nuts. Then slice into thin slices and place on a cracker and then serve.
