Cooking Chocolate for Santa

So here we are 5 more sleeps until Santa comes. How can you tell what question I get to answer everyday about 10 times? I have to admit when I think of Christmas and Santa, I also think about chocolate. I also have to admit there is hardly a day that goes by that I don’t eat some chocolate. I love chocolate and no I am not one of those people that will only eat one type of chocolate. I pretty much will eat almost all chocolate. I also will let you in on a little secret about me. I hardly ever bake. I am kind of like Rachael Ray. I love to cook but baking I am just ok with. But I do have some recipes that I love to bake.

One of those recipes is one that my husband and I make every Christmas. Yes it has chocolate in it. It is basically a big chocolate bar that you slice up. It is very easy and it is a great recipe to get the kids involved in cooking. It is also nice to wrap up and take over as a little gift to a friend’s house over the holidays.

Easy Chocolate Bar

1 lb Semi-sweet chocolate chips
1 lb Marshmallows
1 lb Unsalted Peanuts
2 Tbsp Cocoa
2 Tbsp Butter
1 tsp Vanilla

First chop up the nuts to get them a bit smaller. I use my food processor on the pulse mode.

Next put all the ingredients except the peanuts in a large microwaveable bowl. Microwave for 2 minutes. Remove from microwave and stir. Place back in the microwave and heat for another minute or until melted.

Next mix in peanuts. The mixture will become harder to mix, so butter up your hands and mix with your hands.

Finally cut a large piece of plastic wrap and place on a large cutting board. Roll out chocolate mixture into a log. At this point I just roll it up and let it sit. When I am ready to serve I slice off the amount I need and roll up the rest.

Enjoy, and if you want you can even leave a piece for Santa.
