Celebrating With Port Wine

So I am sitting here at 6:50 AM and it is a holiday here in Canada. Well kind of a holiday. It is our boxing day. I would rather call it shopping day. My dad, my sister and I go out shopping every year on this day. I know it is crazy, but we love it. I am waiting for them to pick me up so we can go and be with all the crowds the day after Christmas.
This time of year for a lot of us is a time to take a breather. Christmas is over; New Years isn’t for a week. Plus it is really all about celebrating. You don’t really have to worry if you have bought all the gifts and everything.
So I thought what better time to write about my new favorite drink. Now you are probably thinking Carolin it isn’t even 7AM yet. I know but this is what came to mind. This drink is so smooth and refreshing. I just fell in love with it right away. It kind of surprised me that I liked it so much, because it has port and tonic water in it. Neither of which I like. See I always say just try something out of your comfort zone and you may like it. Now for all of you who don’t know exactly what port is: it is red wine (usually) with brandy mixed in. We have a lot of Port wine as it is really called, in our house. My husband loves it. I on the other hand usually cook with it instead of drinking it. My husband also loves Tonic where as I love Club soda.
Well I was watching the cooking shows one day; one in particular caught my attention it is call Ricardo and Friends with Ricardo Larrivee. He was doing his Christmas special and he made this drink and I thought of my husband right away. You have to try this drink plus it has Pomegranate juice in it and we all know the benefits of it.
Pomegranate Portonic
1 cup pomegranate juice
1-3/4 cups chilled white port
3 cups chilled tonic waterIce cubes
8 x long strips lemon zest
DIRECTIONS:In a pitcher, mix together the juice, port and tonic water.Fill 8 highball glasses three quarters full of ice. Drop in the zest strips and fill with the Portonic.

Now first of all you probably noticed it calls for White Port, you probably can make this with regular port but try and find the white port. My husband says it is lighter tasting. I found it quite easily. Second of all if you don’t want to make a pitcher try what I did.
1 shot of Pomegranate juice
1-½ shots of White Port
In a highball glass measure out the pomegranate juice and port. Fill with ice and tonic. Drop in lemon zest.
Enjoy the season.
COOKING TIP OF THE DAYMake sure when you zest your lemon not to get any of the white. The white is very tart
