Cooking Mexican Using Leftovers

So do you want to know what I did with my left over turkey? I first made stock with the carcass. Then I made Paula Deens soup “The Lady’s Chicken noodle soup” I wrote a blog on the soup before. I just used left over turkey instead of chicken. But I still had some turkey left and I was getting sick of turkey. So I knew if I was going to use it all up it better be very tasty and not even resemble turkey. So I decided to cook Mexican style. I thought what better way to disguise this turkey but cook it in a Mexican style. So I grabbed an enchilada recipe I had and changed it up a lot because I did not have all the ingredients. Well I am glad I wrote down what I did, because my Mexican cooking was great and I didn’t even think I was eating turkey.
Now I am not saying you have to only use left over turkey for this recipe. You can use what ever you like, remember make it your own
Leftovers Disguised as Enchiladas
Olive oil
1 medium onion sliced
4 garlic cloves minced
Hot sauce
1 ½ tsp ground cumin
1 ½ tsp dried oregano
1 28oz can diced tomatoes
2-3 cups chopped cooked turkey or chicken
Tortillas
2 cups cheese
Salt
Preheat oven to 350°
Heat large skillet over medium heat. Add a couple of tablespoons of olive oil. Then sauté onions until they are just getting soft add garlic sauté for another minute. Add in cumin, oregano and hot sauce. Cook for another minute. Then add tomatoes and turkey. Cook for about another 10 minutes to thicken mixture.
Mean while char the tortillas. I have a gas stove. I just put them over the flame for a bit. If you have an electric stove top just crisp them up in a dry pan on the stovetop. Or in the oven for a few minutes.
Finally it is time to build. In the bottom of a casserole dish add some of the tomatoes mixture. Just a bit. Then put on a tortilla, 1/3 of the cheese more sauce. Repeat these layers ending with cheese.
Bake in oven for about 35 minutes until bubbling.
Let sit for 5 minutes and then serve. I served it with some sour cream on the side.
COOKING TIP GF THE DAY
Experiment with your cheese in this dish. I actually used Gouda. You don’t have to use anything traditional.
