Cooking Pasta With Giada De Laurentiis

So by now you have probably realized that I love the cooking shows.  I could if I had the time watch them most of the day.  But I don’t have the time so I catch them when I can.  One of the shows I do enjoy is Everyday Italian with Giada De Laurentiis.  I love the way she cooks very simple dishes.  The ones you know you will just love.  Now mind you I love Italian cooking and I love to cook Italian. But with her dishes there is nothing pretentious about them.  They are dishes she grew up with or dishes she has modified to fit into our busy lives.

Now that I have said I love Italian cooking.  I believe I have mentioned before I am not a great fan of pasta.  I love to cook pasta dishes.  It is just that pasta doesn’t seem to love me to much.  A lot of the time I start to get a feeling that I am bloating up.  Well someone suggested to me that I should try brown rice pasta.  Well for me it has changed my life.  I can finally cook pasta and enjoy it.  So if you are like me and get all bloated then I suggest you try the brown rice pasta.  By the way my kids love it and do not know the difference.

So back to Giada De Laurentiis and cooking Italian.  Well the show I caught the other week was made just for me and for me to share with you.  She cooked pasta that sounded and looked so good.  Oh and so easy.  You know how I love easy cooking.  She cooked with frozen shrimp.  Now I thought maybe I was the only one that did this.  Apparently I was wrong.  Now I do it because I usually have forgotten to thaw them.  I had this idea if I put them in frozen then I would have just that much more flavor.  Well she cooked with frozen shrimp out of convenience and speed.  She basically cooked this pasta dish within 20 minutes.

Cooking Mexican Using Leftovers

So do you want to know what I did with my left over turkey?  I first made stock with the carcass.  Then I made Paula Deens soup “The Lady’s Chicken noodle soup” I wrote a blog on the soup before.  I just used left over turkey instead of chicken.  But I still had some turkey left and I was getting sick of turkey.  So I knew if I was going to use it all up it better be very tasty and not even resemble turkey.  So I decided to cook Mexican style.  I thought what better way to disguise this turkey but cook it in a Mexican style.  So I grabbed an enchilada recipe I had and changed it up a lot because I did not have all the ingredients. Well I am glad I wrote down what I did, because my Mexican cooking was great and I didn’t even think I was eating turkey.

 

Now I am not saying you have to only use left over turkey for this recipe.  You can use what ever you like, remember make it your own

Celebrating With Port Wine

So I am sitting here at 6:50 AM and it is a holiday here in Canada.  Well kind of a holiday.  It is our boxing day.  I would rather call it shopping day.  My dad, my sister and I go out shopping every year on this day.  I know it is crazy, but we love it.  I am waiting for them to pick me up so we can go and be with all the crowds the day after Christmas.

This time of year for a lot of us is a time to take a breather.  Christmas is over; New Years isn’t for a week.  Plus it is really all about celebrating.  You don’t really have to worry if you have bought all the gifts and everything. 

So I thought what better time to write about my new favorite drink.  Now you are probably thinking Carolin it isn’t even 7AM yet.  I know but this is what came to mind.  This drink is so smooth and refreshing.  I just fell in love with it right away.  It kind of surprised me that I liked it so much, because it has port and tonic water in it.  Neither of which I like.  See I always say just try something out of your comfort zone and you may like it.  Now for all of you who don’t know exactly what port is: it is red wine (usually) with brandy mixed in.  We have a lot of Port wine as it is really called, in our house.  My husband loves it.  I on the other hand usually cook with it instead of drinking it.  My husband also loves Tonic where as I love Club soda.
